30 Minute One Bowl Banana Bread Muffins (with One Banana!)

Don’t you hate it when you buy a bunch of bananas and end up tossing the last one because it’s too ripe? Before you send that spotty banana to the trash, put it to good use and make these soft and fluffy One Bowl Banana Bread Muffins instead! This small-batch recipe turns one ripe banana into a dozen golden banana muffins for breakfast or snacking.

Save That Last Banana!

One of my family members refuses to eat bananas once they start showing brown spots. It never bothers me, but it is annoying to waste food. I like to think of myself as a little bit of a kitchen superhero; I must rescue the last banana somehow!

With just a single banana and a few pantry staples, I made 12 deliciously moist muffins! You’ll find similar recipes online, but most make a full loaf of banana bread. I decided to scale it down for small-batch muffins — same flavor, faster baking time, and no waste.

What You’ll Need and How To Make the Muffins

All you need is:

  • One ripe banana
  • A few simple ingredients already in your kitchen
  • A large mixing bowl
  • A 12-cup muffin tin

First, I mixed the 3 dry ingredients in a bowl: baking soda, flour, and sugar.

Then I added the wet ingredients: softened butter, an egg, milk, vanilla, and a single mashed banana.

You can stir by hand, but I prefer using a hand mixer for an extra smooth batter.

The batter is thick, so spooning it evenly into the muffin tin takes a minute, but it’s worth effort!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 banana
  • 1 egg
  • milk (enough to fill a cup containing egg)
  • 1 stick butter, softened
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees.
  • Add dry and wet ingredients in one large mixing bowl and mix until batter is well combined.
  • Spoon batter into a greased 12-muffin tin until it's 2/3 full.
  • Bake for 25-30 minutes or until toothpick in center of muffin comes clean.

Notes

I recommend using a hand mixer when combining the wet and dry ingredients.
Use muffin liners instead of greasing the muffin tin.
If you prefer to make banana bread instead of muffins, pour batter into a greased loaf pan and bake for 45 minutes or until toothpick in center comes clean.
