2 medium-sized bowls
1 loaf pan
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup white granulated sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup dragon fruit drink mix powder
- 1 tsp vanilla extract
Preheat oven to 350 degrees. Grease a loaf pan.
In a medium bowl, whisk together dry ingredients.
In the other bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in vanilla.
Alternately add dry ingredients and milk to the wet ingredients, mixing until just combined. Do not overmix.
Fold in dragon fruit mix.
Pour into prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center is clean. Cool for 15 minutes before serving.
- If you don't have dragonfruit drink mix, a potential alternative is 6 oz. of Starbucks Refreshers concentrate in Mango Dragonfruit.
- If you want your quick bread to look more pinkish, add food coloring.
